On Monday 27 March, Grace & Savour at Hampton Manor was awarded a Michelin star, the most sought after accolade dedicated to restaurants offering outstanding cooking.

Under the guidance and leadership of Head Chef, David Taylor, the 15-course tasting menu celebrates a food revolution with its unwavering attention to sustainability, placing farmers and growers at the forefront of dishes served and stories told. Soil health and biodiversity, alongside social and environmental ethics underpin each culinary decision, ensuring a flavour-filled bountiful experience.

Taylor acknowledges that making conscious decisions to combat supply chain issues has been neither inexpensive nor without its challenges. Working only to what the land and sea yields, the menu subverts the ease of access many have been trained to expect. With the support of remarkable suppliers across the British Isles, such as small boat collective Sole of Discretion, Welsh arable farm Paviland Farm, and neighbouring Packington Estate and Rams Hall Farm, the team at Grace & Savour effectively collaborate to ensure a regenerative future.

Each dish is an education for guests and encourages curiosity about what we’re consuming. Current dishes include: Cornish crab with a cracker of fennel, pickled sea buckthorn, anise syrup and the first shoots of spring; Organic Chicken from Rhug Estate with Berkswell and wild garlic; and Caramelised whey & ewes milk sorbet from Ram Hall Farm with a compote of red currants from 4 Acres organics.

Taylor trained under the guidance of Glynn Purnell before moving to Norway where he was part of the team that won three Michelin stars at Oslo’s Maaemo. In response to the news he comments; “To create an experience with my wife Anette and our incredible team that lives to celebrate regenerative practices and now holds a Michelin star is an incredibly humbling and proud moment for us all. Grace & Savour is the latest addition to the Hampton Manor estate (owned by the Hill’s family) opening its doors in February 2022. Set within the Victorian Walled Garden, it is an immersive dining experience, featuring a working kitchen garden that produces an acre of food using organic principles. Since opening, it has also been awarded 4 AA Rosettes, included in The Good Food Guide’s Top 20 Most Exciting Restaurants for 2022, and won first place in the SquareMeal Awards 2023 holding the medal for the ‘UK’s Best Restaurant’.

Guests can expect a 360° 24-hour culinary experience during their visit, from Chef checking them in, to counter dining that overlooks the kitchen, tracing the journey from place, to produce, to plate. Each of the five beautifully designed bedrooms overlook the estate’s original kitchen garden. Designed by Fjona Hill, sustainability also leads all aesthetic decisions, having worked closely with suppliers who match their ethos.

The restaurant is open Wednesday to Saturday for dinner, and lunch on Saturday only. Prices start from £690pp for dinner, bed and breakfast in a garden-facing room during the week. Non-residents can book the restaurant with the tasting menu, priced at £135. The lunch menu is priced at £90pp for eight-courses.
