The Boat - a micro-farm and restaurant by Chef Liam Dillon in Lichfield, Staffordshire - has teamed up with the renowned Maison, Dom Pérignon for a luxurious champagne-paired tasting menu on Wednesday 23 July, to offer guests a unique and unforgettable dining experience.
At the exclusive, ticketed event, guests will be treated to an extensive tasting menu, alongside the unrivalled pairing of four different Dom Pérignon champagnes.
Sarah Randall, Senior Brand Manager from Dom Pérignon and Oliver Smith, Private Client Director at Moet Hennessy UK, will be welcoming guests and introducing the different Champagnes they will enjoy throughout the evening, sharing valuable insights into each Vintage, and why they pair so perfectly with the tasting menu provided at The Boat.
Guests will begin on the terrace with Dom Pérignon Vintage 2012 Magnum, fruity and floral on the nose, with vibrant, acidic and bitter notes on the palate and ginger, tobacco and toastiness on the finish. Paired with this will see canapes from Liam Dillon, including the Aged Beef Tartare Croustade, a Cod Roe Pillow, the Packington Fried Chicken Thigh & Sturia Caviar and the Beer Soaked Spelt Loaf, Chicken Butter, Liver Parfait & Garden Pickles.
Next up is the Dom Pérignon Vintage 2015, which stands out with its complex aromatic flavour profile combining intense roasted and cocoa notes balanced by delicate floral aromas of lime blossom, jasmine and peony. This will be paired with a Dressed Porthilly Oyster, Garden Vegetables and Horseradish.
For the meat and fish courses, guests can enjoy Dom Pérignon Vintage 2004, Plenitude 2, the oldest Champagne that the diners will enjoy on the night. Renowned for being a very good year for Champagne making, this Vintage presents notes of cocoa, mocha, roasted coffee, brioche and honey, which goes perfectly with the main course of the Fillet of Gigha Halibut, St Austell Mussel and Stuffed Courgette Flower, and the Roast Poussin Chicken, Braised and Stuffed Leg, with Sweetcorn & Chicken Sauce.
Finally, for the dessert courses, guests will end with Dom Pérignon Rose Vintage 2009. Mature and rich scents are found on the nose, including rose, saffron, cassis and gif, with a markedly smooth and round mouthfeel on the palette. To pair, enjoy a Lichfield Raspberry, Black Cardamom & Sweet Cicely and the Amalfi Lemon Parfait, Cucumber and The Boat Honey.
