“At Trillium, choice is everything,” says Glynn. “We want guests to explore the menu in whatever way suits them — whether that’s a classic three-course meal or a custom selection of sharing plates. It’s about dining the way you want to, without rules.”
The kitchen delivers a seasonal, ever-changing menu built around shared dining. Guests can choose from a range of small and large plates, all designed to be enjoyed across the table. This flexible approach allows diners to sample multiple dishes in one sitting — tasting a variety of tastes, textures, and influences. The wine list, curated by Phil Innes of Loki Wine, reflects the same spirit of exploration — rotating regularly to spotlight everything from hidden gems and low-intervention producers to iconic names.
“We’re building a wine list that’s as important to the restaurant as the food,” says Phil. “It’s not about prestige — it’s about offering a dynamic, ever-changing selection that showcases undiscovered treasures and unexpected finds. There will always be something on the list to surprise and delight.”
Trillium’s setting is immersive and intimate, shaped by a design narrative that blossoms from the quiet strength of its namesake flower. Inspired by folklore and nature’s rhythms, the interiors feature a romantic palette of wine-stained reds, beetroot, and plum — softened with sage, clay, and petal pink. Ethereal details — from hand-painted finishes and etched glass to dappled woodland lighting — infuse the space with a sense of mystery, movement, and poetry.
